
Bean tacos with corn, lime, blue cheese and pickled ginger
Recipe for two people
Ingredients:
- 6 small tortillas
- 1 jar of corn
- 0.5 red pepper
- A piece of blue cheese
- Zest from 1 lime
- Approx. 80 g string beans
- Fresh dill
- 0.5 yellow onion
- Salt, pepper
- Rapeseed oil
- 1 teaspoon sambal oelek
- 1 jar pickled ginger


Prepare this before you head out:
- Mix your string beans with a little rapeseed oil, finely chopped dill, sambal oelek and salt.
- Roughly chop the yellow onion, cut the pepper into smaller pieces and mix with the beans.
- Pack all the ingredients and head out!
Once you’ve reached your destination:
- Heat some rapeseed oil on your gas stove.
- Put the onion, corn, pepper and beans into the frying pan.
- Fry until the onion, corn, pepper and beans are nicely browned
- Grate the zest from one lime (be sure to only use the peel) onto the vegetables.
Serve in a small tortilla and top the bean salad with a little pickled ginger, blue cheese and garnish with fresh dill.
